These cookies are perfect for your mid-morning, afternoon, or after-dinner mindful indulgence. I am a huge advocate of allowing indulgences into our life! If we can pack them full of nutrients, it’s an added bonus. I made these the other day when I was craving something sweet and comforting because my period was due. We had no chocolate or anything sweet in the house (damn!). But I saw the honey, the macadamias, and the ginger and thought hmmm that might work? And it did! I hope you love these as much as I do. Makes 8-10 cookies
Ingredients
Dry Ingredients:
- 1 1/4 cup of almond flour
- 1/4 cup oats
- 1/4 cup macadamias (Roasted and salted)
- 1tsp baking powder
- 1 heaped tbs fresh ground/finely grated ginger
Wet Ingredients:
- 2tbs coconut oil (melted)
- 1 whole egg
- 3tbs liquid honey
- 1tbs lemon juice (optional)
Method
- Pre-heat the oven to 160 degrees
- Roast the macadamias in olive oil and salt for 10-15mins in the oven. Chop roughly and set aside.
- Add all the dry ingredients into one bowl, and all wet ingredients into another. Mix each bowl separately, making sure you whisk the wet ingredients well, before combining the wet and dry ingredients together, mixing them well to form the cookie batter.
- Take small handfuls of batter and place them on a baking tray with baking paper, making approximately 8-10 small cookie-sized blobs.
- Place the tray in the oven and bake for 15 minutes.
- Let cookies cool before consuming, or if you can’t wait, enjoy a hot cookie straight from the oven!
