I love creating recipes that remind me of take-aways. There is a reason why – “Eat Food You Enjoy” is one of my core coaching pillars. I’ve just noticed that we are SO much more likely to be consistent with eating a whole food diet, if we don’t feel like we are being deprived.
This is a great dinner for when you feeling like a tasty burger, but you don’t want it accompanied with a bread bloat. Or maybe you want the indulgence of a burger, but you also feel like a lighter dinner meal. The cool thing is, the flavour from a burger comes more form the protein, the fats, and sauces, rather that the bread itself so you will be pleasantly surprised at how satisfying this is. Enjoy!
Serves 4-6
Ingredients
Protein
- 600g beef or chicken mince
- 2 eggs
Carbohydrates
- 500g potato or kumara (for the fries)
- 1 tin of slices beetroot or 1 medium raw beetroot.
Healthy Fats
- 120g Colby Cheese
- 2 x medium Avocado
- 1tbsp olive oil (for frying)
Non-starchy Vegetables
- 1 White onion
- 4 cloves of garlic
- lettuce
- 2 x tomato’s
- 4 x gherkins
- 1/2 red onion
Other
- 2 tbsp Tamari Sauce
- 1 tbsp Whole grain mustard
Optional additions:
- Lite Wattie’s BBQ sauce or tomato sauce
- Mayo
Method
- Heat oven to 200 degrees. Chop the kumara or potato into “chips” and chop raw beetroot into thin round slices if you want beetroot (skip this step if using tinned beetroot).
- Toss everything in olive oil or use an olive oil spray, add lots of salt, and place potato/ kumara/ beet slices in the oven for ~20mins.
- To make mince patties, combine mince, diced onion, diced or crushed garlic, tamari sauce, mustard, and eggs. Mix well (I just use my hands).
- Heat oil in a non-stick pan, mould a handful of mince mixture into a patty shape, and pan fry on high heat for approximately 5mins each side. Repeat until mixture is gone (Should make around 6 patties)
- Chop the rest of the non-starchy vegetables, cheese, avocado, gherkins etc. Place on a large platter, with a side bowl of lettuce and let everyone help themselves!!
- NOTE: I’m not big on sauces from a sugar/canola oil perspective. And you will notice I don’t normally use them in recipes. However, I love a good T-sauce on a burger and a little sauce never hurt anyone. So please enjoy your favourite sauce on burger night guilt free!
