Lunch is one of the hardest meals to get balanced for a number of reasons. It’s easy to forget, and then we end up resorting to something bread based from a café. Or we are limited to what kitchen facilities are available in our work place.
This easy lentil pasta salad is one of my favourite meat free lunch prep meals. It takes only 10 minutes to make, and can be enjoyed both hot or cold. San Remo do a number of awesome pasta’s that provide protein, so you don’t need to worry about having to cook meat separately. Which saves time and hassle!
Serves 3-4
Ingredients
Non-Starchy Vegetables
- 1/2 cup Olives (black or green)
- 1/2 red onion (chopped finely)
- Frozen Spinach (2-4 frozen cubes based on preference)
Healthy Fats
- 4 tbsp Extra Virgin Olive Oil
- 4 tbsp Pesto
- 1/2 Block (diced) Feta
Carbohydrate
- 1 Pack Red Lentil Pasta
Other
- 1/2 cup Organic Tomato & Basil Pasta Sauce
- Salt and Pepper
Optional Additions
- Cherry tomatoes (when in season – these were $7 a small packet when i made this!)
- Fresh Basil
- Balsamic glaze (drizzled on top as a garnish)
Method
- Cook the Pasta as per instructions on the packet
- Wilt the frozen spinach by microwaving for 1-2 minutes
- Once cooked toss through the spinach and the rest of the ingredients
- Enjoy warm and save the rest in the fridge for cold pasta leftovers!
Add extra salt and olives if needed.
