This is an easy no bake slice that you can make in less than 10 minutes with your food processor. I was craving a ginger slice when it was coming up to that time of the month, but I’ve also been trying to get my hormonal acne under control under my jaw line. So although sugar would temporarily feel like self-care, I didn’t want to make my acne any worse. So this was my creation! A higher protein, healthy fat, natural sugar ginger slice :).  I hope you love this too and it helps take care of your cravings without any unwanted symptoms. Much love!

Makes ~ 16-20 squares

Ingredients

Dry Ingredients:

  • 2 Scoops Go Good Vanilla protein powder (www.gogood.co.nz – MYN15 for discount code).
  • 1 cup each  – Cashews,  Dates (soak in hot water for 1 min then drain), Shredded coconut.

Wet Ingredients:

  • 2tbs each -Liquid Honey, Almond Butter, Melted Coconut oil.

Flavour:

  • 4 tbs grated ginger (more if you like extra ginger taste!)
  • 1 x grated lemon rind.

Method

  1. Start with soaking one cup of dates in hot water and set aside.
  2. Add the cashews, protein powder, and coconut into the food processor and blitz to break up the cashews.
  3. Drain the dates after 1-2mins, then add the dates, and all other ingredients to the food processor and blitz until smooth.
  4. Add a little extra honey or coconut oil the mixture is too dry.
  5. Transfer the mixture into rectangular or square container (e.g. a large rectangular sistema) and pat down. The slice should be around 2-3 cm thick.
  6. Pop into the fridge to set for 1 hour.
  7. Slice in 2-3cm2 squares, or whichever portion size you desire, and enjoy!

Keep in the fridge for up to 2 weeks.
