This is the only raw slice recipe you are ever going to need! I honestly can’t believe much much this ticked the boxes for me. Not too sweet, but also still super indulgent. Perfect consistency, doesn’t fall apart, and keeps so well in a container in the fridge. This is going to be my go to slice moving forward I think! Hope you love it :). 

Makes 10-14 pieces 

Ingredients

Base:

 

  • 1 cup nuts (I used cashews)
  • 1 cup dates (Soaked) 
  • 1/2 cup nut butter (I used peanut butter)

Topping:

 

  • 1tbs coconut oil
  • 100g of 82% dark chocolate (I used the Whitikas artesian range)
  • 1/4 cup of roughly chopped roasted nuts (I used macadamias).

 

Method

 

 

  1. If using regular dates (not medjol), soak for 1 minute in boiling water to soften then drain and add to the food processor with the nuts and nut butter. Blitz all together until it forms a nutty date paste. 
  2.  Pour into a baking dish lined with baking paper and press down to form a 1cm this base. 
  3. Melt the chocolate and coconut oil in a sauce pan over heat, stiring the whole time to make sure it doesn’t burn! (Chocolate melts and burns very quickly – I actually just hover the pan over the heat rather than putting it down on the stove. 
  4. Pour the melted chocolate evenly over the nutty date base, and top with crushed nuts of your choice. 
  5. Place in the fridge to set for 1-2 hours. Slice into squares, place in a container and store back in the fridge. 

 

    TIPS: You can play around with the flavours of thie slice by mixing and matchin with the nuts and nut butters! Want a snickers tasting one? Use peanut butter butter and chooped peanuts on top! Or a nutella tasting one? Add hazelnut butter and roasted hazelnuts on top! You can also add things like cinnamon, vanilla, ginger, chilli or freeze dried berries to this mix.     Nutrition note: If you cut this slice into 12 pieces, there is only 10g of natural sugar per serve. The protein, fibre, and healthy fats from the nuts will also slow down the release of sugar into your blood stream. So please enjoy this as a daily guilt free, mindful indulgence!
