These vanilla protein balls are a perfect mid-morning or afternoon snack to curb those sweet cravings. They are high in healthy fats and protein, and don’t contain any dried fruit which means they are great even if you are diabetic or insulin resistant. So simple to make, everything just goes in the food processor.  (P.s. Careful! I’ve heard these become very popular in the household – you may need to hide them!!)   

Makes 8-10

Ingredients

  • 2 cups Almonds
  • 1 cup Cashews
  • 2 scoops Vanilla whey protein powder
  • ½ cup Melted coconut oil
  • 2 heaped tbsp Peanut or almond butter
  • 1 tbsp Liquid honey or organic maple syrup (optional)

Method

  1. Melt coconut oil in the microwave so you have ½ a cup full of coconut oil in a liquid form.
  2. Add all the other ingredients into the food processor
  3. Turn food processor on and while it’s running, slowly pour in the coconut oil.
  4. Check the consistency – If the mixture becomes too runny to make into balls, add a little more protein powder.
  5. If this mixture is too dry, add a bit more coconut oil.
  6. Once you’ve got the right consistency, it’s time to get your hands dirty! Roll small handfuls of the mixture into balls, and pop into a container.
  7. Set balls in the fridge for 1 hour, and store for up to 2 weeks.
