As a nutritionist and ex-dieter, I believe indulgences are so important when it comes to a healthy relationship with food.

This slice is the perfect morning or afternoon tea pick me up. There are many healthy slice recipe out there that use wholefood ingredients, but some of them have a bigger impact on your blood sugar than others.  For example,  a slice that is made up of predominantly carbohydrates – e.g. oats, dates, and honey as the base  might give a BIG sugar spike (yes, even though it’s healthy ingredients!).  A bit of sugar is fine. Just not too much, and not delivered too quickly. When you consum sugar in a small amount with protein and healthy fats or fibre, you wont get a this big sugar spike. This recipe has a base of protein and healthy fats, and a small amount of sugar, so you can the best of both worlds. Delicious, still some “sweet”, and “blood sugar balancing”.  

Other health benefit: Cacao power itself, is rich in antioxidants, magnesium, potassium, and zinc. So please enjoy this slice as an everyday indulgence, 100% guilt free :). 

Makes 12

Ingredients

Protein 

Carbohydrates

  • 2 tbsp liquid honey or pure maple syrup (or another sweetener of your choice – 1tsp stevia, 1tbsp brown rice syrup, maple syrup)

Healthy Fats

  • ½ cup almonds
  • 2 heaped tbsp peanut butter (about ¼ of a jar)
  • 6 tbsp melted coconut oil (Half for the base, half for the topping)
  • Sprinkle of Granola (I use this one – Something To Crow About

Other

  • 3 tbsp Cocoa or cacao powder

Method

  1. Add almonds to the food processor and blitz until finely grounded.
  2. Add peanut butter, protein powder, honey, cocoa powder and 3tbs of melted coconut oil and blitz again. (If it’s still crumbly, add a little more melted coconut oil).
  3. Pour into a container and press down to form the base.
  4. For the topping: Mix together 3tbsp of coconut oil (melted), 3tbsp of cocoa powder, and 1tbsp of honey (or any other sweetener of your choice).
  5. Pour over the topping, a sprinkle of granola, and set in the freezer.
